Ingredients

- 2 cucumbers, sliced
- 1 small red onion, thinly sliced

Instructions
1. Cut watermelon into cubes and place in bowl
2. Slice cucumbers and add to bowl
3. Add red onion slices evenly
4. Sprinkle chopped mint and parsley
5. Mix olive oil and lemon juice
6. Pour dressing over salad
7. Toss gently to combine
8. Season with salt and pepper
9. Let rest 5 to 10 minutes
10. Serve chilled
