- 2 cups cooked shredded chicken
- 1 cup full-fat cottage cheese (blended until smooth)
- 1/2 cup plain Greek yogurt
- 1/2 cup buffalo sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- 1 cup shredded sharp cheddar cheese
- 1/4 cup crumbled blue cheese (optional)
- 1–2 tablespoons chopped chives or green onions (optional garnish)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a small baking dish.
- Blend cottage cheese in a blender or food processor until completely smooth.
- In a large bowl, mix blended cottage cheese, Greek yogurt, buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Fold in shredded chicken until evenly coated.
- Stir in half of the shredded cheddar and blue cheese if using.
- Transfer mixture to baking dish and top with remaining cheddar cheese.
- Bake for 20–25 minutes until hot and bubbly.
- Broil 2–3 minutes for a lightly golden top if desired.
- Garnish with chives and extra buffalo sauce before serving.
Notes
- For extra protein, substitute part of the chicken with cooked turkey breast.
- For a milder flavor, reduce buffalo sauce and add 1 tablespoon milk.
- Use low-fat cottage cheese and reduced-fat cheddar for a lighter option.
