Description

  • 1 cup full-fat cottage cheese (blended until smooth)
  • 1/2 cup plain Greek yogurt
  • 1/2 cup buffalo sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 12 tablespoons chopped chives or green onions (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a small baking dish.
  2. Blend cottage cheese in a blender or food processor until completely smooth.
  3. In a large bowl, mix blended cottage cheese, Greek yogurt, buffalo sauce, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Fold in shredded chicken until evenly coated.
  5. Stir in half of the shredded cheddar and blue cheese if using.
  6. Transfer mixture to baking dish and top with remaining cheddar cheese.
  7. Bake for 20–25 minutes until hot and bubbly.
  8. Broil 2–3 minutes for a lightly golden top if desired.
  9. Garnish with chives and extra buffalo sauce before serving.

  • For extra protein, substitute part of the chicken with cooked turkey breast.
  • For a milder flavor, reduce buffalo sauce and add 1 tablespoon milk.
