Tender turkey meatballs simmer in a savory homemade mushroom gravy for an easy, comforting skillet dinner. Serve them with mashed potatoes, egg noodles, or rice.
Ingredients
- 1 pound ground turkey
- 1/3 cup plain breadcrumbs
- 3 tablespoons milk
- 1 large egg
- 2 tablespoons finely minced onion
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil, divided
- 8 ounces mushrooms, sliced
- 1 small yellow onion, finely diced
- 2 tablespoons all-purpose flour
- 2 cups low-sodium chicken broth
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried thyme
- 1/4 teaspoon kosher salt, plus more to taste
- 1/4 teaspoon black pepper
- 2 tablespoons chopped parsley, optional
Instructions
1. Combine breadcrumbs and milk in a bowl and let stand for 3 minutes. Add egg, minced onion, salt, pepper, and garlic powder. Stir in the turkey gently until combined.
3. Shape the mixture into about 16 evenly sized meatballs.
5. Heat 1 tablespoon olive oil in a large skillet over medium heat. Brown the meatballs for about 5–6 minutes, turning carefully. Transfer them to a clean plate.
7. Add the remaining oil, mushrooms, and diced onion. Cook for 7–9 minutes until the moisture evaporates and the mushrooms begin to brown. Sprinkle flour over the vegetables and cook for 1 minute.
9. Gradually stir in the chicken broth. Add Worcestershire sauce, thyme, salt, and pepper. Simmer for 2–3 minutes until the gravy lightly thickens. Return the meatballs and their juices to the skillet.
11. Cover and gently simmer for 8–10 minutes, or until the centers of the turkey meatballs reach 165°F. Adjust the gravy with a splash of broth if necessary. Taste for seasoning and garnish with parsley.
