Description
Traditional crockpot chicken and wild rice soup is a creamy, hearty comfort dish made with tender chicken, earthy wild rice, and simple wholesome ingredients slow cooked to perfection.
Ingredients
- 1 lb boneless skinless chicken breasts or thighs
- 3/4 cup uncooked wild rice
- 1 medium onion chopped
- 2 carrots sliced
- 2 celery stalks chopped
- 3 cloves garlic minced
- 6 cups chicken broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 cup milk or half-and-half
- 2 tbsp butter
- 2 tbsp flour (optional)
Instructions
1. Rinse wild rice under cold water
2. Place chicken in crockpot
3. Add rice onion carrots celery and garlic
4. Pour in chicken broth and add seasoning
5. Cook on low for 6 to 7 hours
6. Remove chicken shred and return to pot
7. Prepare cream mixture with butter flour and milk
8. Stir into soup and cook 20 minutes more
9. Adjust seasoning and serve warm
Notes
- Use chicken thighs for richer flavor
- Skip cream for lighter version
- Add mushrooms or spinach for variation
- Store leftovers up to 3 days in fridge
- Add broth when reheating if thickened
