Ingredients
12 oz spaghetti or linguine
2 tbsp olive oil
4 cloves garlic, sliced
8 oz mushrooms, sliced
1 tsp oregano
1/4 tsp red pepper flakes
2 cups cherry tomatoes
1 cup crushed tomatoes
1/2 cup vegetable broth
1 cup fresh basil
2 tbsp butter or vegan butter
Salt and pepper
Parmesan or vegan alternative
Instructions
1. Boil salted water and cook pasta until al dente. Reserve pasta water.
2. Heat olive oil and sauté garlic until fragrant.
3. Add mushrooms, oregano, and pepper flakes. Cook until golden.
4. Stir in tomatoes and broth. Simmer for 10 minutes.
5. Season and add butter for richness.
6. Toss pasta with sauce, adding reserved water if needed.
7. Fold in fresh basil and serve with Parmesan.
Notes
Use any pasta shape you prefer.
Add spinach or zucchini for variation.
Use plant-based butter for vegan version.
