A timeless slow cooker creamy chicken and potatoes recipe made with tender chicken, rich sauce, and hearty potatoes for the ultimate comfort meal.
Ingredients
- 1½ pounds chicken breasts or thighs
- 1½ pounds baby or Yukon gold potatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can cream of chicken soup
- 1 cup chicken broth
- ½ cup sour cream or heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons butter
- Fresh parsley optional
Instructions
1. Wash and cut potatoes evenly
2. Place potatoes in slow cooker base
3. Add chicken over potatoes
4. Mix soup, broth, garlic, and seasoning
5. Pour mixture over chicken and potatoes
6. Add onion and butter on top
7. Cover and cook on low for 6–7 hours
8. Remove and shred chicken, then return
9. Stir in cream and cook 15 minutes more
10. Serve warm with sauce
