Description
A comforting and traditional-style teriyaki chicken bowl with tender chicken glazed in a rich savory-sweet sauce, served over fluffy rice with fresh broccoli.
Ingredients
- 2 chicken breasts or 4 thighs, cut
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp ginger, grated
- 2 garlic cloves, minced
- 1/4 cup soy sauce
- 2 tbsp mirin
- 2 tbsp honey or brown sugar
- 1 tsp sesame oil
- 1 tsp cornstarch + 2 tbsp water
- 1 cup rice
- 2 cups water
- 2 cups broccoli florets
- 1 tsp olive oil
- Sesame seeds and green onions (optional)
Instructions
1. Rinse rice and cook with water and salt for 15 minutes, then rest.
2. Mix marinade ingredients and coat chicken for 20 minutes.
3. Blanch or sauté broccoli until tender-crisp.
4. Cook chicken in a pan until golden and fully cooked.
5. Add teriyaki sauce and simmer.
6. Stir in cornstarch slurry until thickened.
7. Assemble bowl with rice, chicken, and broccoli.
8. Garnish and serve warm.

- Adjust sweetness or saltiness to taste.
- Use chicken thighs for juicier texture.
