Description
A simple lemon dill salmon with roasted carrots easy dinner idea, featuring tender salmon, bright citrus flavor, and naturally sweet roasted carrots.
Ingredients
- 4 salmon fillets (150–180g each)
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 2 tbsp fresh dill, chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp black pepper
- 500g carrots, peeled and cut
- 2 tbsp olive oil
- 1 tsp thyme or oregano
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
1. Preheat oven to 200°C.
2. Prepare carrots and toss with olive oil and spices.
3. Spread carrots on tray and roast 25–30 minutes.
4. Mix olive oil, lemon juice, zest, dill, and garlic.
5. Place salmon on tray and coat with mixture.
6. Bake salmon 12–15 minutes until flaky.
7. Rest briefly, then serve with carrots and garnish.
Notes
- Use fresh dill for best flavor.
- Add honey to carrots for sweetness.
- Cook salmon fresh for best texture.
- You can add zucchini or potatoes.
