Description
This pumpkin chocolate chip snack cake has a soft, moist pumpkin crumb, warm cinnamon and spices, and pockets of melted semisweet chocolate. It comes together easily without a mixer, making it a simple fall dessert for family dinners, afternoon coffee, or seasonal gatherings.
Ingredients
- 1 1/4 cups all-purpose flour (about 150 grams)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground nutmeg
- 1 cup plain pumpkin puree
- 2 large eggs
- 1/2 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1/3 cup neutral oil
- 1 teaspoon vanilla extract
- 3/4 cup semisweet chocolate chips
Instructions
1. Preheat the oven to 350°F. Line an 8-inch square metal baking pan with parchment paper and lightly grease the exposed sides.
3. Whisk the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg together in a medium bowl until evenly combined.

5. In a separate bowl, whisk the pumpkin puree, eggs, brown sugar, granulated sugar, neutral oil, and vanilla until smooth.
7. Add the dry ingredients to the pumpkin mixture. Fold gently just until no dry flour remains. Fold in the chocolate chips, reserving a small handful for the top if desired.
9. Spread the batter evenly in the prepared pan. Sprinkle the reserved chocolate chips over the surface. Bake for 30–35 minutes, or until the center springs back lightly and a toothpick inserted near the center comes out without wet batter.
11. Cool the cake in the pan on a wire rack for about 20 minutes. Carefully lift it from the pan and allow it to cool further before cutting into 9 squares.
Notes
- Use plain pumpkin puree rather than pumpkin pie filling.
- Measure the flour carefully or weigh approximately 150 grams for the best texture.
- Avoid overmixing once you add the flour.
- If a toothpick hits melted chocolate, test another spot before deciding whether the cake needs additional baking.
- Allow the cake to cool before slicing so the crumb can set properly.
