Description
Pineapple grilled chicken skewers combine juicy chicken with sweet caramelized pineapple and a smoky tropical BBQ flavor.
Ingredients

- 600 g chicken breast or thighs
- 2 cups fresh pineapple chunks
- 1 red bell pepper
- 1 green bell pepper
- 1 red onion
- 3 tbsp soy sauce
- 2 tbsp honey
- 2 tbsp olive oil
- 2 cloves garlic
- 1 tbsp ginger
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp chili flakes (optional)
- 2 tbsp BBQ sauce
- 1 tbsp pineapple juice
Instructions
1. Mix marinade ingredients in a bowl
2. Add chicken and marinate for at least 1 hour
3. Prepare pineapple and vegetables
4. Thread chicken, pineapple, and veggies onto skewers
5. Preheat grill to medium heat
6. Grill skewers for 12–15 minutes, turning occasionally
7. Brush with glaze and cook briefly
8. Remove, rest, and serve

- Use fresh pineapple for best caramelization
- Chicken thighs stay juicier than breast
- Soak wooden skewers before grilling
