  • 1 1/2 pounds sirloin steak, thinly sliced
  • 4 cups potatoes, peeled and diced evenly
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 small onion, diced
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, as needed

Instructions

1. Preheat the oven to 375°F (190°C). Lightly grease a casserole dish.

2. Pat the steak dry. Season with salt, black pepper, thyme and rosemary.

3. Heat a drizzle of olive oil in a large skillet over medium-high heat. Brown the steak for 2 to 3 minutes per side. Work in batches to avoid overcrowding. Transfer to a plate.

4. Reduce the heat and melt the butter in the same skillet. Add the onion and cook for 3 to 4 minutes. Stir in the garlic and cook briefly until fragrant.

5. Spread some onion and garlic over the bottom of the prepared baking dish. Add half of the diced potatoes and season lightly.

6. Layer in the browned steak. Add the remaining potatoes and pour the heavy cream evenly over the casserole.

7. Combine the cheddar and Parmesan. Sprinkle the cheese evenly across the top.

8. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for about 10 minutes longer, or until the potatoes are fork-tender and the cheese is bubbling and golden.

9. For a deeper golden finish, broil briefly while watching closely.

10. Rest the casserole for 5 to 10 minutes before serving.

Notes

  • Cut the potatoes into evenly sized pieces so they cook at the same rate.
  • Do not fully cook the steak during browning because it continues cooking in the oven.
  • Parboil larger potato pieces briefly if desired, then drain thoroughly.
  • Freshly shredded cheese usually melts more smoothly than pre-shredded cheese.
  • Ribeye can replace sirloin for a richer casserole.
