Description
A Mediterranean cucumber tomato salad made with fresh vegetables, olive oil, and herbs. Light, healthy, and full of vibrant flavor.
Ingredients
- 3 medium cucumbers, diced
- 4 ripe tomatoes, chopped
- 1 small red onion, thinly sliced
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh mint (optional)
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice or red wine vinegar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 100g feta cheese (optional)
Instructions
1. Wash and prepare all vegetables
2. Dice cucumbers and chop tomatoes
3. Place vegetables in a large bowl
4. Add sliced onion, parsley, and mint
5. Whisk olive oil and lemon juice in a small bowl
6. Pour dressing over vegetables
7. Toss gently to combine
8. Season with salt and pepper
9. Add feta cheese if desired
10. Let rest for 10–15 minutes before serving

- Use fresh, ripe vegetables for best flavor
- Keep dressing separate if making ahead
- Add olives or peppers for variation
