Ingredients

- 1 lb chicken breast, cubed
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 lemon (juice + zest)
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 cup cherry tomatoes
- Salt and black pepper
- 1 tsp oregano
- Red pepper flakes (optional)
- Fresh parsley
Instructions
1. Heat olive oil in skillet over medium-high heat
2. Add chicken and cook until golden brown
3. Remove chicken and set aside
4. Sauté garlic until fragrant
5. Add lemon juice and zest, deglaze pan
6. Return chicken and add vegetables
7. Season and toss well
8. Cook until veggies are tender-crisp
9. Garnish with parsley and serve
