Description
Hearty Spring Vegetable Soup with Herbs is a light, nourishing dish packed with fresh seasonal vegetables and aromatic herbs.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 zucchini, diced
- 1 cup green beans
- 1 cup peas
- 1 cup spinach
- 2 potatoes, diced
- 6 cups vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp oregano
- 2 tbsp parsley
- 1 tbsp dill or basil
- lemon juice (optional)
Instructions
1. Heat olive oil in a pot and cook onion until soft
2. Add garlic and cook briefly
3. Stir in carrots and celery and cook 5 minutes
4. Add potatoes and broth, bring to boil
5. Simmer for 10 minutes
6. Add zucchini, beans, and peas
7. Simmer 10 minutes until tender
8. Add spinach and seasonings
9. Finish with herbs and lemon juice
10. Serve warm
