Description
Hearty slow cooker spring chicken stew with tender chicken, fresh vegetables, and light herb broth. A simple, comforting seasonal meal.
Ingredients

- 1½ lbs chicken thighs or breasts
- 2 cups baby potatoes
- 2 carrots sliced
- 1 cup peas
- 1 onion chopped
- 2 cloves garlic minced
- 3 cups chicken broth
- 1 tbsp olive oil or butter
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp thyme
- 1 tsp parsley
Instructions
1. Cut chicken and vegetables
2. Add chicken to slow cooker
3. Layer potatoes and carrots
4. Add onion and garlic
5. Pour broth and add seasoning
6. Cook on low 6–7 hours
7. Add peas in last 30 minutes
8. Adjust seasoning and serve hot
Notes
- Use thighs for richer flavor
- Mash potatoes for thicker broth
- Add lemon juice for brightness
- Store leftovers up to 3 days
