Description
A simple low carb healthy meal featuring juicy grilled chicken breasts paired with crisp-tender steamed broccoli, finished with fresh lemon and herbs.
Ingredients
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 2 tablespoons olive oil, divided
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 lemon, zested and juiced
- 4 cups broccoli florets
- 2 tablespoons water
- 1 tablespoon fresh parsley (optional)
Instructions
1. Whisk olive oil, lemon juice, zest, salt, pepper, garlic powder, and paprika.
2. Coat chicken with marinade and refrigerate 15 minutes.
3. Preheat grill to medium-high heat.
4. Place chicken on grill and cook 5–6 minutes per side.
5. Prepare broccoli in steamer basket over simmering water.
6. Steam broccoli for 3–4 minutes until tender.
7. Remove chicken and let it rest for 5 minutes.
8. Plate chicken with broccoli and garnish with parsley.
9. Drizzle juices and serve with lemon wedges.
Notes
- Marinate longer for deeper flavor.
- Use grill pan indoors if needed.
- Add chili flakes for heat.
- Store leftovers up to 3 days.
