Description
Tender dry rub grilled BBQ ribs with crispy bark, packed with smoky flavor and perfect for family cookouts.
Ingredients
2 racks halal beef ribs (about 2.5 kg total)
1/4 cup brown sugar
2 tbsp smoked paprika
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
1 tsp ground cumin
1 tsp mustard powder
2 tbsp kosher salt
1 tbsp black pepper
2 tbsp olive oil
Optional: apple cider vinegar + water
Instructions
1. Preheat grill to 120°C using indirect heat
2. Remove membrane and pat ribs dry
3. Rub ribs with olive oil evenly
4. Mix all dry spices in a bowl
5. Coat ribs thoroughly with dry rub
6. Place ribs bone side down on cool grill side
7. Cook covered for 2 hours maintaining temperature
8. Spritz every 45 minutes if desired
9. Check internal temp at 90°C
10. Rest 15 minutes before slicing

Use halal-certified beef ribs
Pat ribs dry for better bark formation
Add wood chips for extra smokiness
Rest meat before serving
Store leftover rub up to 3 months
