Description
A fresh cucumber salad with olive oil and herbs, light, crisp, and perfect as a healthy traditional side dish.
Ingredients
- 4 medium cucumbers, sliced
- 1 small red onion, thinly sliced
- 3 tbsp extra virgin olive oil
- 2 tbsp lemon juice or 1 tbsp vinegar
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh dill or mint
- 1/2 tsp salt
- 1/2 tsp black pepper
- Optional: pinch of dried oregano
Instructions
1. Wash and slice cucumbers evenly
2. Place cucumbers in a large bowl
3. Add thinly sliced red onion
4. Add chopped parsley and dill or mint
5. Mix olive oil and lemon juice in a small bowl
6. Pour dressing over salad
7. Toss gently to coat all ingredients
8. Season with salt and pepper
9. Let rest for 10–15 minutes
10. Serve fresh or slightly chilled
