This Crockpot Honey BBQ Chicken Bowl delivers tender, juicy chicken coated in a rich, sweet, and smoky sauce. It’s a simple dump-and-go meal perfect for busy weeknights.


Ingredients

Scale
  • 1.5 lbs boneless skinless chicken breasts or thighs
  • 1 cup sugar-free BBQ sauce
  • 1/4 cup honey
  • 2 tbsp tomato paste
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • 3 cups cooked rice
  • Optional: cilantro, green onions, lime

Instructions

1. Place chicken in slow cooker

2. Mix BBQ sauce, honey, tomato paste, broth, and spices

3. Add onion and garlic

4. Pour mixture over chicken

5. Cook on low 3–4 hours or high 1.5–2 hours

6. Shred chicken and mix with sauce

7. Let sit 5 minutes

8. Serve over rice
