Description

Creamy Garlic Butter Shrimp Pasta combines tender shrimp, garlic butter, and a rich Parmesan cream sauce with perfectly cooked pasta for an easy, elegant dinner.

Ingredients

Scale

400g (14 oz) pasta such as fettuccine or linguine

1 tablespoon salt for boiling water

500g (1 lb) large shrimp, peeled and deveined

2 tablespoons unsalted butter

1 tablespoon olive oil

4 cloves garlic, finely minced

Salt to taste

Freshly ground black pepper to taste

1/2 teaspoon paprika (optional)

Juice of 1/2 lemon

3 tablespoons unsalted butter

3 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups (480 ml) heavy cream

1 cup freshly grated Parmesan cheese

Salt to taste

Black pepper to taste

1/2 teaspoon Italian seasoning (optional)

1 pinch nutmeg (optional)

Fresh parsley, finely chopped, for garnish

Extra Parmesan cheese, for garnish

Olive oil, for garnish (optional)

Instructions

1. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Reserve 1 cup of pasta water, then drain and set aside.

2. Pat the shrimp dry and season with salt, pepper, and paprika if using.

3. Heat 2 tablespoons butter and 1 tablespoon olive oil in a large skillet over medium heat. Add 4 cloves minced garlic and cook for 30 seconds.

4. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until pink and opaque. Squeeze in the lemon juice, then remove the shrimp and set aside.

5. In the same skillet, melt 3 tablespoons butter over medium heat. Add 3 cloves minced garlic and cook briefly until fragrant.

6. Sprinkle in the flour and whisk for 1 minute to form a light roux.

7. Gradually whisk in the heavy cream and simmer for 3 to 5 minutes until slightly thickened.

8. Add the Parmesan cheese and stir until smooth. Season with salt, pepper, Italian seasoning, and nutmeg if using.

9. Add the cooked pasta to the sauce and toss to coat. Add a splash of reserved pasta water if needed to loosen the sauce.

10. Return the shrimp to the skillet and toss gently for 1 minute until warmed through.

11. Serve immediately with parsley, extra Parmesan, and a light drizzle of olive oil if desired.

Notes

Serve this pasta right away for the creamiest texture.

Store leftovers in an airtight container in the refrigerator for up to 2 days.

Reheat gently over low heat with a splash of milk or cream.

Add mushrooms, spinach, or sun-dried tomatoes for variation.

Use freshly grated Parmesan for the smoothest sauce and best flavor.

Do not overcook the shrimp or they may turn rubbery.
