These Cottage Cheese Pumpkin Pie Cups deliver creamy pumpkin flavor with a healthy protein-rich filling and warm fall spices.
Ingredients
- 1 cup pumpkin puree
- 1 cup low-fat cottage cheese
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 tablespoon pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 cup whole wheat flour
- 1/4 cup melted coconut oil
- 1/4 teaspoon salt
Instructions
1. Preheat oven to 350°F.
2. Blend cottage cheese, pumpkin puree, honey, eggs, pumpkin pie spice, and vanilla until smooth.
3. Mix flour, coconut oil, and salt in another bowl.
4. Press crust mixture into greased muffin tin cups.
5. Pour pumpkin filling into each cup.
6. Bake for 20 to 25 minutes until set.
7. Cool for 10 minutes before transferring to a rack.
8. Serve chilled or at room temperature.
