Ingredients

- 2 lbs beef stew meat
- 3 potatoes chopped
- 3 carrots sliced
- 2 celery stalks chopped
- 1 onion diced
- 4 cloves garlic minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp rosemary
- 1 bay leaf
Instructions
1. Pat beef dry and brown in skillet
2. Transfer beef to crockpot
3. Sauté onion, celery, garlic
4. Add vegetables to crockpot
5. Stir in tomato paste
6. Pour in broth
7. Add seasoning and herbs
8. Cook on low 7-8 hours
9. Adjust thickness if needed
10. Serve hot
Notes
- Add red wine for deeper flavor
- Thicken with cornstarch if desired
- Store leftovers up to 3 days
