Ingredients

- 2 cups cooked chickpeas
- 1 cup cherry tomatoes, halved
- 1 medium cucumber, diced
- 1/2 red onion, sliced
- 1/2 cup bell pepper, diced
- 1/4 cup parsley, chopped
- 2 tbsp mint (optional)
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp red wine vinegar
- 1 garlic clove, minced
- Salt and pepper to taste
- Optional: feta cheese, olives, oregano
Instructions
1. Rinse and drain chickpeas well
2. Combine chickpeas, tomatoes, cucumber, onion, and bell pepper
3. Add parsley and mint and mix gently
4. Whisk olive oil, lemon juice, vinegar, garlic, salt, and pepper
5. Pour dressing over salad and toss gently
6. Add feta and olives if desired
7. Let rest 15 minutes before serving
