Description

Classic crockpot lemon herb chicken and potatoes is a comforting slow cooker dish with tender chicken, soft potatoes, and bright lemon herb flavor.


Ingredients

Scale
  • 4 boneless skinless chicken breasts or thighs
  • pounds baby potatoes
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • Juice of 1 lemon
  • 2 tablespoons olive oil or butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Instructions

1. Wash and cut potatoes evenly

2. Chop onion and mince garlic

3. Place potatoes in crockpot base

4. Add onion and garlic

5. Place chicken on top

6. Mix broth lemon juice oil and seasoning

7. Pour mixture over everything

8. Cook on low 6–7 hours or high 3–4 hours

9. Adjust seasoning before serving

10. Serve warm with juices
