Ingredients
- 1 cup almond flour
- 1/4 cup melted coconut oil
- 2 tablespoons maple syrup
- 16 ounces softened cream cheese
- 1/2 cup Greek yogurt
- 1/2 cup vanilla or chocolate protein powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
Instructions
1. Preheat oven to 350°F and line a 9×9 baking pan with parchment paper.
2. Mix almond flour, coconut oil, and maple syrup until crumbly.
3. Press crust into pan and bake for 10 minutes.
4. Beat cream cheese and Greek yogurt until smooth.
5. Add protein powder, eggs, and vanilla extract.
6. Fold chocolate chips into the cheesecake mixture.
7. Pour filling over crust and spread evenly.
8. Bake for 25 to 30 minutes until edges set.
9. Cool completely and chill for at least 2 hours.
10. Slice into bars and serve chilled.
