A fresh and simple chickpea salad with olive oil and lemon inspired by traditional Mediterranean flavors.
Ingredients

- 2 cups cooked chickpeas
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, sliced
- 1/3 cup parsley, chopped
- 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp lemon zest
- 1 garlic clove, minced
- Salt and pepper
Instructions
1. Rinse and drain chickpeas.
2. Combine chickpeas, tomatoes, cucumber, and onion.
3. Add fresh parsley and mix gently.
4. Whisk olive oil, lemon juice, zest, garlic, salt, and pepper.
5. Pour dressing over salad and toss.
6. Let rest 15 minutes before serving.
