Description

A bright and healthy chickpea salad with fresh parsley and lemon, inspired by traditional Mediterranean flavors. Simple, refreshing, and ready in minutes.


Ingredients

  • 2 cups cooked chickpeas
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/3 cup fresh parsley, chopped
  • 2 tbsp fresh mint (optional)
  • 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 garlic clove, minced
  • Salt to taste
  • Black pepper to taste

Instructions

1. Rinse and drain chickpeas well

2. Add chickpeas, cucumber, and tomatoes to a bowl

3. Mix in chopped parsley and mint

4. Whisk olive oil, lemon juice, zest, garlic, salt, and pepper

5. Pour dressing over salad

6. Toss gently to combine
