Ingredients

- 1 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/3 cup fresh parsley, chopped
- 2 tbsp fresh mint (optional)
- 4 tbsp olive oil

- 1 tsp lemon zest
- 1 garlic clove, minced
- Salt to taste

Instructions
1. Rinse and drain chickpeas well
2. Add chickpeas, cucumber, and tomatoes to a bowl
3. Mix in chopped parsley and mint
4. Whisk olive oil, lemon juice, zest, garlic, salt, and pepper
5. Pour dressing over salad
6. Toss gently to combine
7. Let rest 10 minutes before serving
