Description

A fresh Mediterranean chickpea salad with feta and tomatoes, packed with vibrant flavors, healthy ingredients, and simple preparation.


Ingredients

Scale
  • 2 cups cooked chickpeas
  • 1 1/2 cups cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 red onion, sliced
  • 1/3 cup parsley, chopped
  • 4 tbsp olive oil
  • 1 1/2 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1/2 cup feta cheese, crumbled
  • Pinch oregano

Instructions

1. Rinse and drain chickpeas thoroughly

2. Combine chickpeas, tomatoes, cucumber, and onion in a bowl

3. Add chopped parsley and mix gently

4. Whisk olive oil, lemon juice, vinegar, garlic, salt, and pepper

5. Pour dressing over salad and toss gently

6. Fold in feta cheese and oregano

7. Let rest 15 minutes before serving

8. Serve at room temperature
