Description

This chickpea and spinach stew is a healthy one-pot vegan comfort food made with simple ingredients, rich spices, and nourishing flavors.


Ingredients

Scale
  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 cans chickpeas drained
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 4 cups fresh spinach
  • 1 carrot diced optional
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1 tsp salt
  • 1/2 tsp black pepper
  • chili flakes optional
  • lemon juice optional

Instructions

1. Heat olive oil in a pot over medium heat

2. Add onion and sauté until soft

3. Stir in garlic and cook briefly

4. Add carrot if using and cook slightly

5. Mix in spices and toast for 1 minute

6. Pour in tomatoes and simmer for 5 minutes

7. Add chickpeas and vegetable broth

8. Simmer for 15 to 20 minutes

9. Add spinach and stir until wilted

10. Adjust seasoning and add lemon juice if desired

11. Serve warm with herbs or bread

Notes

  • Mash some chickpeas for thicker texture
  • Add tahini for creamy richness
  • Store in fridge up to 4 days
