Description

Tender baked sweet potatoes stuffed with spicy buffalo chicken and topped with ranch, cheese, and fresh green onions for an easy family dinner.


Ingredients

4 medium sweet potatoes

1 tbsp olive oil

Salt and black pepper, to taste

2 cups cooked shredded chicken

1/3 cup buffalo sauce

1 tbsp melted butter

1/2 tsp garlic powder

1/2 tsp paprika

Ranch or blue cheese dressing

Shredded cheddar or mozzarella cheese

Green onions, sliced

Crumbled blue cheese (optional)


Instructions

1. Preheat oven to 400°F (200°C). Rub sweet potatoes with olive oil and season with salt and pepper.

2. Bake for 40-50 minutes until tender.

3. Combine shredded chicken, buffalo sauce, butter, garlic powder, and paprika in a skillet and heat through.

4. Slice baked sweet potatoes open and fluff the insides with a fork.

5. Fill each sweet potato with buffalo chicken mixture.

6. Top with ranch or blue cheese dressing, shredded cheese, and green onions.
