Description

Authentic German Potato Salad (Kartoffelsalat) served warm with crispy bacon, tangy vinegar dressing, and tender potatoes. A traditional German side dish perfect for family meals, Oktoberfest celebrations, and holiday gatherings.


Ingredients

2 pounds waxy potatoes (Yukon Gold or red potatoes)

6 slices thick-cut bacon

1 small onion, finely chopped

3/4 cup chicken broth

3 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon sugar

Salt to taste

Black pepper to taste

2 tablespoons fresh parsley, chopped


Instructions

1. Place potatoes in a large pot, cover with cold water, and boil for 15-20 minutes until fork tender.

2. Drain potatoes, cool slightly, peel while warm, and slice into 1/4-inch rounds.

3. Cook bacon in a skillet over medium heat until crisp. Remove and crumble.

4. Reserve 2-3 tablespoons bacon drippings in skillet.

5. Add onions and sauté for 3-4 minutes until translucent.

6. Stir in chicken broth, vinegar, mustard, and sugar. Simmer gently.

7. Add sliced potatoes and toss carefully to coat with dressing.

8. Mix in crumbled bacon and parsley.

9. Season with salt and pepper.

10. Serve warm.

Notes

Use waxy potatoes for the best texture.

Store leftovers in the refrigerator for up to 3 days.
