Ingredients

  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt
  • Black pepper
  • 1 cup shredded mozzarella
  • 1/2 cup grated parmesan
  • 1/2 cup breadcrumbs (optional)

Instructions

1. Preheat oven to 375°F (190°C).

2. Heat olive oil and sauté onion.

3. Add garlic and cook for 30 seconds.

4. Brown the ground beef.

5. Stir in tomatoes, tomato paste, oregano, thyme, salt and pepper.

6. Simmer for 5 minutes.

7. Layer zucchini and beef mixture in a greased baking dish.

8. Repeat the layers.

9. Top with mozzarella, parmesan and breadcrumbs.

10. Bake covered for 20 minutes.

11. Remove foil and bake another 10 minutes until golden.

12. Rest for 5 minutes before serving.
