- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups low-sodium vegetable broth
- 1 tbsp olive oil
- 1 tsp thyme
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley and lemon (optional)
Instructions
- Heat olive oil in a large pot. Sauté onions, garlic, carrots, and celery until softened.
- Add cabbage and cook for 5 minutes until slightly wilted.
- Pour in diced tomatoes and vegetable broth.
- Add thyme, paprika, salt, and pepper.
- Bring to a boil, then reduce to simmer for 25–30 minutes.
- Adjust seasoning to taste.
- Garnish with parsley and a squeeze of lemon.
