Description

Ingredients

  • 1/2 head green cabbage, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tbsp olive oil
  • 1 tsp thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley and lemon (optional)

Instructions

  1. Heat olive oil in a large pot. Sauté onions, garlic, carrots, and celery until softened.
  2. Add cabbage and cook for 5 minutes until slightly wilted.
  3. Pour in diced tomatoes and vegetable broth.
  4. Add thyme, paprika, salt, and pepper.
  5. Bring to a boil, then reduce to simmer for 25–30 minutes.
  6. Adjust seasoning to taste.
  7. Garnish with parsley and a squeeze of lemon.

Notes

This soup freezes well for up to 3 months.
