Ingredients

  • 4 large russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large eggs
  • 1/4 cup whole milk
  • Salt and pepper to taste
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup sour cream
  • 2 tablespoons unsalted butter, softened
  • 2 green onions, finely sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Optional: extra shredded cheese, fresh parsley, diced tomatoes, sliced avocado

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Rub potatoes with olive oil and sprinkle with salt and pepper.
  3. Bake for 45–60 minutes until fork-tender and skins are crisp.
  4. Allow potatoes to cool slightly.
  5. Whisk eggs, milk, salt, and pepper in a bowl.
  6. Cook eggs in a skillet over medium-low heat, stirring gently until softly scrambled. Remove from heat.
  7. Slice potatoes lengthwise and scoop out most of the interior into a bowl, leaving a thin shell.
  8. Add sour cream, butter, garlic powder, smoked paprika, and half of the cheddar cheese to the potato flesh. Mash until creamy.
  9. Fold in scrambled eggs, bacon, and green onions.
  10. Spoon filling back into potato shells and mound slightly.
  11. Sprinkle remaining cheddar cheese on top.
  12. Bake for 15–20 minutes until heated through and cheese melts.
  13. Broil for 2–3 minutes for a golden finish if desired.
  14. Rest briefly, garnish, and serve warm.
