Ingredients
- 2 salmon fillets 400-500g
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 300 g pasta
- Water for boiling
- 1 tsp salt
- 1 tbsp olive oil
- 3 cloves garlic minced
- 1 small onion chopped
- 2 cups crushed tomatoes
- 1/2 cup heavy cream
- 1/2 tsp oregano
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup fresh basil chopped
- 1/4 cup parmesan cheese
- Juice of 1/2 lemon
Instructions
1. Boil salted water and cook pasta until al dente
2. Reserve half cup pasta water then drain
3. Season salmon with salt pepper and garlic powder
4. Heat oil and cook salmon 4 to 5 minutes per side
5. Remove and flake into large pieces
6. Sauté onion until soft then add garlic
7. Add crushed tomatoes and spices then simmer 8 to 10 minutes
8. Stir in cream until smooth
9. Add pasta and toss with sauce
10. Fold in salmon gently
11. Add basil and lemon juice
12. Serve with parmesan cheese
Notes
- Use fresh or thawed salmon for best results
- Substitute cream with lighter options if desired
- Add spinach or vegetables for extra nutrition
- Adjust cream for richer or lighter sauce
