  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 small onion, finely diced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh chopped parsley (optional garnish)
  • Extra grated Parmesan (optional garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, paprika, garlic powder, and onion powder.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5-6 minutes per side until golden brown and cooked to 165°F internal temperature. Remove and set aside.
  3. Reduce heat to medium. Melt butter in the same skillet. Add diced onion and cook 3-4 minutes until soft. Stir in garlic and cook 30 seconds.
  4. Pour in chicken broth and scrape up browned bits. Simmer 3-4 minutes.
  5. Add heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes. Simmer 5-7 minutes until thickened.
  6. Return chicken to the skillet and spoon sauce over top. Simmer 5 minutes.
  7. Garnish with parsley and Parmesan. Serve hot.
