Ingredients
For the Salad:
- 2 cups cooked chicken breast (sliced or shredded)
- 4 cups mixed greens (spinach, arugula, or lettuce)
- 1 ½ cups fresh strawberries (sliced)
- 1 large avocado (sliced)
- ¼ cup red onion (thinly sliced)
- ¼ cup toasted almonds or walnuts
- ¼ cup crumbled feta cheese (optional)
For the Dressing:
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
1. Wash and dry greens. Slice strawberries, avocado, and onion. Cook chicken if needed and slice.
2. Whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper to make dressing.
3. Place greens in a large bowl as base.
4. Add chicken, strawberries, avocado, and onion on top.
5. Sprinkle nuts and feta cheese if using.
6. Drizzle dressing and toss gently.
7. Serve immediately for best freshness.
