Description

This spinach bacon quiche is simple, satisfying, and full of savory flavor. Perfect for breakfast, brunch, or meal prep.


Ingredients

Scale
  • 5 large eggs, beaten
  • 1 1/4 cups half and half
  • salt and pepper
  • 1/2 cup chopped onion
  • 1 1/2 cups baby spinach leaves, chopped
  • 6 slices bacon, cooked and crumbled
  • 1 1/4 cups shredded cheese (Swiss, mozzarella, cheddar, or Monterey Jack)
  • 1 9-inch homemade or store-bought pie crust

Instructions

  1. Preheat oven to 375°F. Place crust in pie dish and crimp edges.
  2. Blind bake crust with parchment and weights for 15 minutes, remove, prick, then bake 8 more minutes.
  3. Cook bacon, then sauté onion and spinach in remaining grease for 2 minutes.
  4. Layer onion, spinach, bacon, and cheese in crust.
  5. Blend eggs, half and half, salt, and pepper. Pour over filling.
  6. Reduce oven to 350°F. Bake for 40–45 minutes until set.
  7. Cool for 10 minutes before slicing. Store leftovers in fridge.

Notes

Make ahead: Prep crust and egg mixture up to 2 days ahead.Assemble and bake fresh.

Freezing: Wrap cooled quiche well and freeze up to 2 months.Thaw in fridge overnight and reheat at 350°F.
