  • Optional: 1 cup sliced mushrooms
  • Optional: fresh chopped parsley for garnish

Instructions

  1. Pat beef tips dry and season with salt, pepper, and paprika.
  2. Heat olive oil in a Dutch oven over medium-high heat and sear beef in batches until browned; remove and set aside.
  3. Reduce heat to medium, add butter, then cook onion until soft and lightly golden.
  4. Add garlic and cook briefly until fragrant.
  5. Sprinkle flour over onion mixture and stir to cook out raw flour.
  6. Slowly pour in warm beef broth while stirring, scraping up browned bits.
  7. Add Worcestershire sauce, thyme, rosemary, and bay leaf.
  8. Return beef and juices to the pot, add mushrooms if using, and bring to a gentle simmer.
  9. Cover and simmer on low for 1½ to 2 hours until beef is tender.
  10. Boil potatoes in salted water until fork-tender; drain well.
  11. Mash potatoes with butter and warm milk or cream until smooth; season to taste.
  12. Remove bay leaf, adjust seasoning, and thicken sauce if desired.
  13. Serve beef tips and gravy over mashed potatoes and garnish with parsley.
