Instructions
- Pat beef tips dry and season with salt, pepper, and paprika.
- Heat olive oil in a Dutch oven over medium-high heat and sear beef in batches until browned; remove and set aside.
- Reduce heat to medium, add butter, then cook onion until soft and lightly golden.
- Add garlic and cook briefly until fragrant.
- Sprinkle flour over onion mixture and stir to cook out raw flour.
- Slowly pour in warm beef broth while stirring, scraping up browned bits.
- Add Worcestershire sauce, thyme, rosemary, and bay leaf.
- Return beef and juices to the pot, add mushrooms if using, and bring to a gentle simmer.
- Cover and simmer on low for 1½ to 2 hours until beef is tender.
- Boil potatoes in salted water until fork-tender; drain well.
- Mash potatoes with butter and warm milk or cream until smooth; season to taste.
- Remove bay leaf, adjust seasoning, and thicken sauce if desired.
- Serve beef tips and gravy over mashed potatoes and garnish with parsley.
