Ingredients
- 1 1/2 pounds beef stew meat, cut into bite-sized pieces

- 4 tablespoons unsalted butter, melted
- 5 cloves garlic, minced
- 1 tablespoon olive oil
- 1 1/2 pounds baby potatoes, halved
- 1 small onion, chopped
- 1/2 cup beef broth
- 1 tablespoon fresh parsley, chopped

Instructions
1. Pat beef dry and season with salt, pepper, paprika, and thyme.
2. Heat olive oil in a skillet and sear beef pieces until browned on all sides.
3. Transfer beef to the slow cooker.
4. Add halved potatoes and chopped onion.
5. Mix melted butter with minced garlic and pour over the beef and potatoes.
