Ingredients
- 1.5 kg chicken thighs or breasts
- 3 sweet potatoes peeled and cubed
- 2 carrots sliced
- 1 onion chopped
- 3 cloves garlic minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp thyme
- 1/2 tsp cumin
- 1 cup chicken broth
- 1 tbsp tomato paste
- 1 tbsp lemon juice
- Fresh parsley
- Optional zucchini or spinach
Instructions
1. Peel and cube sweet potatoes evenly
2. Slice carrots and chop onion
3. Place chicken at bottom of slow cooker
4. Add sweet potatoes carrots onion and garlic on top
5. Mix olive oil salt pepper paprika thyme and cumin
6. Whisk broth with tomato paste
7. Pour broth mixture over ingredients
8. Drizzle seasoning mixture and stir gently
9. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours
10. Check seasoning and adjust before serving
11. Add spinach if using and let wilt
12. Drizzle lemon juice and garnish with parsley

- Use chicken thighs for more flavor
- Mash some sweet potatoes for thicker texture
