Ingredients
- 1.5 lbs boneless skinless chicken breasts
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 4 cups low-sodium chicken broth
- 1 cup unsweetened almond milk or low-fat milk
- 1/2 cup plain Greek yogurt
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon crushed red pepper flakes optional
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup fresh spinach, chopped
- 1/2 cup grated Parmesan cheese
- 1/2 cup small pasta or orzo optional
Instructions
1. Place chicken breasts in the crockpot
2. Heat olive oil and sautรฉ onion until softened, then add garlic
3. Transfer onion and garlic mixture to crockpot
4. Add sun-dried tomatoes, broth, and seasonings
5. Cover and cook on LOW for 6โ7 hours or HIGH for 3โ4 hours
6. Remove chicken and shred using two forks
7. Return shredded chicken to crockpot
8. Stir in milk and pasta if using
9. Cook on HIGH for 20โ30 minutes until pasta is tender
10. Reduce heat and stir in Greek yogurt, Parmesan, and spinach
11. Mix until creamy and well combined
12. Adjust seasoning and let sit briefly before serving
