Description
Pineapple Glazed Salmon is a quick healthy dinner idea featuring tender salmon fillets coated in a sweet and tangy pineapple glaze, ready in just 25 minutes.
Ingredients
- 4 salmon fillets (6 oz each)
- 1 cup fresh pineapple juice
- 2 tablespoons honey or maple syrup
- 1 tablespoon soy sauce or tamari
- 1 tablespoon rice vinegar
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh cilantro or parsley for garnish
- Cooked brown rice or quinoa for serving
Instructions
1. Preheat oven to 400°F (200°C)
2. Combine pineapple juice, honey, soy sauce, vinegar, garlic, and ginger in a saucepan
3. Simmer for 5–7 minutes until slightly thickened
4. Remove from heat and whisk in olive oil
5. Season salmon with salt and pepper and place on baking sheet
6. Brush salmon with pineapple glaze
7. Bake for 12–15 minutes until flaky
8. Broil for 2 minutes to caramelize glaze if desired
9. Remove from oven and rest briefly
10. Garnish with herbs and serve with rice or quinoa

- Add red pepper flakes for spice
