Ingredients
- 1 lb skinless, boneless chicken breasts, thinly sliced
- 1 cup fresh pineapple, diced
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Optional toppings: diced avocado, sliced jalapeños, lime wedges
Instructions
1. Whisk lime juice, olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper in a bowl.
2. Add sliced chicken and toss to coat well. Refrigerate for 15–60 minutes.
3. Mix pineapple, red onion, cilantro, and lime juice in another bowl to make salsa. Season lightly.
4. Heat a skillet over medium-high heat and add a little olive oil.
5. Cook chicken for 3–4 minutes per side until fully cooked (165°F internal temperature).
6. Remove chicken and let it rest for 5 minutes, then slice into strips.
7. Warm tortillas in a skillet or microwave.
8. Assemble tacos with chicken, pineapple salsa, and optional toppings.
9. Garnish with cilantro and lime juice. Serve immediately.
