Description

Pineapple Chicken Stir Fry is a quick and vibrant dinner made with tender chicken, juicy pineapple, crisp vegetables, and a sweet savory stir fry sauce. This easy 20-minute meal delivers tropical flavor and colorful vegetables perfect for serving over rice or noodles.

  • 1 pound boneless skinless chicken breast sliced into thin strips
  • 2 cups pineapple chunks
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 cup broccoli florets
  • 1 small carrot thinly sliced
  • 3 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 tablespoons vegetable oil
  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons pineapple juice
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 2 tablespoons chopped green onions
  • 1 teaspoon sesame seeds
  • 3 cups cooked jasmine rice or noodles for serving

Instructions

  1. Slice chicken into thin strips and prepare all vegetables before cooking.
  2. In a small bowl whisk together soy sauce, honey or brown sugar, pineapple juice, rice vinegar, cornstarch, and water to make the stir fry sauce.
  3. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium high heat.
  4. Add chicken and cook for 4 to 5 minutes until lightly browned and mostly cooked through.
  5. Remove chicken from the pan and set aside.
  6. Add the remaining oil to the pan and sauté garlic and ginger for about 30 seconds.
  7. Add bell peppers, broccoli, and carrots and stir fry for 3 to 4 minutes until slightly tender.
  8. Add pineapple chunks and cook for another 1 to 2 minutes.
  9. Return the chicken to the pan and stir everything together.
  10. Pour the prepared stir fry sauce into the pan and stir continuously for 2 to 3 minutes until the sauce thickens and coats the ingredients.
  11. Serve the pineapple chicken stir fry over warm rice or noodles and garnish with green onions and sesame seeds.
