- 2 cups pineapple chunks
- 1 red bell pepper sliced
- 1 green bell pepper sliced
- 1 cup broccoli florets
- 1 small carrot thinly sliced
- 3 cloves garlic minced
- 1 tablespoon fresh ginger grated
- 2 tablespoons vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons honey or brown sugar
- 2 tablespoons pineapple juice
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 1/4 cup water
- 2 tablespoons chopped green onions
- 1 teaspoon sesame seeds
- 3 cups cooked jasmine rice or noodles for serving
Instructions
- Slice chicken into thin strips and prepare all vegetables before cooking.
- In a small bowl whisk together soy sauce, honey or brown sugar, pineapple juice, rice vinegar, cornstarch, and water to make the stir fry sauce.
- Heat 1 tablespoon vegetable oil in a large skillet or wok over medium high heat.
- Add chicken and cook for 4 to 5 minutes until lightly browned and mostly cooked through.
- Remove chicken from the pan and set aside.
- Add the remaining oil to the pan and sauté garlic and ginger for about 30 seconds.
- Add bell peppers, broccoli, and carrots and stir fry for 3 to 4 minutes until slightly tender.
- Add pineapple chunks and cook for another 1 to 2 minutes.
- Return the chicken to the pan and stir everything together.
- Pour the prepared stir fry sauce into the pan and stir continuously for 2 to 3 minutes until the sauce thickens and coats the ingredients.
- Serve the pineapple chicken stir fry over warm rice or noodles and garnish with green onions and sesame seeds.
