Instructions

  1. Pat the chicken dry with paper towels and season with salt, black pepper, and smoked paprika.
  2. In a bowl whisk together barbecue sauce, pineapple juice, brown sugar, soy sauce, and minced garlic.
  3. Heat olive oil in a large skillet over medium high heat.
  4. Sear the chicken for 3 to 4 minutes per side until lightly golden.
  5. Reduce heat to medium and add pineapple chunks along with optional bell peppers and onions.
  6. Pour the prepared pineapple BBQ sauce over the chicken.
  7. Cover and simmer for 15 to 20 minutes until the chicken is cooked through.
  8. Turn the chicken occasionally so it becomes coated in the sauce.
  9. If the sauce is thin, uncover and simmer a few minutes until it thickens.
