A simple and healthy one pot spaghetti with spinach and Parmesan, perfect for busy weeknights with minimal cleanup and maximum flavor.
Ingredients
8 ounces spaghetti (dry)
1 tablespoon olive oil
1 small onion, chopped
3 cloves garlic, minced
1 cup tomato sauce
4 cups vegetable broth
4 cups fresh spinach
1/2 cup Parmesan cheese
1/2 teaspoon red pepper flakes
Salt and pepper
Fresh basil
Instructions
1. Heat olive oil in a large pot over medium heat
2. Add onion and cook until soft
3. Stir in garlic and red pepper flakes
4. Pour tomato sauce and broth, bring to boil
5. Add spaghetti and press into liquid
6. Simmer and stir occasionally until tender
7. Add spinach and cook until wilted
8. Stir in Parmesan cheese
9. Season and serve with basil
Notes
Use gluten-free pasta if needed
Add chickpeas or chicken for protein
Adjust spice level to taste
