One-Pot Healthy Chicken and Rice is a simple, comforting dinner made with tender chicken, brown rice, and vegetables. This nutritious recipe delivers balanced flavor with minimal cleanup.
Ingredients
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 pound boneless, skinless chicken thighs, cut into bite-size pieces
1 cup long-grain brown rice, rinsed
2 1/4 cups low-sodium chicken broth
1 cup water
1 cup mixed vegetables (peas and carrots)
1 teaspoon dried thyme
1/2 teaspoon paprika
Salt and pepper to taste
Optional: chopped fresh parsley
Instructions
1. Heat olive oil in a large pot over medium heat
2. Add onion and garlic, sauté until soft
3. Season chicken and cook until browned
4. Stir in rice and thyme
5. Pour broth and water, bring to simmer
6. Cover and cook on low for 25–30 minutes
7. Add vegetables and cook 5 more minutes
8. Rest for 5 minutes, fluff and serve
Notes
Add lemon juice for brightness
Swap rice with quinoa or farro
Store leftovers up to 3 days
