Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz pasta (penne or fusilli)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 2 cups chopped romaine lettuce
- Salt and black pepper to taste
- Chopped parsley for garnish
Instructions
1. Heat olive oil in a large pot over medium heat
2. Add chicken, season with salt and pepper, cook until browned (4–5 minutes)
3. Stir in garlic and cook for 30 seconds
4. Pour in chicken broth and bring to a simmer
5. Add pasta, cover, and cook 10–12 minutes until al dente
6. Mix cream, Parmesan, Dijon mustard, and lemon juice in a bowl
7. Pour mixture into pot and stir well
8. Cook 2–3 minutes until sauce thickens
9. Remove from heat and fold in romaine lettuce
10. Adjust seasoning and serve with Parmesan and parsley
