Description
Marry Me Melting Cabbage is a viral roasted cabbage recipe featuring caramelized cabbage wedges topped with a creamy garlic parmesan sauce. This clean eating vegetable dish is tender, flavorful, and surprisingly elegant.
Ingredients
- 1 large green cabbage (2–2.5 lbs), cut into wedges
- 3 tablespoons extra virgin olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 2 tablespoons olive oil or butter
- 4 cloves garlic, minced
- 1 small shallot, chopped
- 1/2 cup vegetable broth
- 1/2 cup light cream or coconut cream
- 1/4 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Cut cabbage into thick wedges keeping the core intact.
3. Arrange wedges on baking sheet and drizzle with olive oil.
4. Mix salt, pepper, garlic powder, onion powder and smoked paprika. Sprinkle evenly over cabbage.
5. Roast cabbage for 25 minutes.
6. Flip wedges carefully and roast another 15–20 minutes until caramelized.
7. Heat olive oil or butter in a skillet over medium heat.
8. Cook chopped shallot for 2–3 minutes until softened.
9. Add garlic and cook for 30 seconds until fragrant.
10. Pour in vegetable broth and simmer 2 minutes.
11. Add cream, parmesan, Italian seasoning and red pepper flakes.
12. Simmer sauce 3–4 minutes until slightly thickened.
13. Stir in lemon juice and adjust seasoning.
14. Place roasted cabbage on serving dish and drizzle with garlic cream sauce.
15. Garnish with parsley, extra parmesan and black pepper before serving.
Notes
- For vegan version use coconut cream and nutritional yeast instead of parmesan.
- Add extra chili flakes for a spicy version.
- Leftovers store well in the refrigerator for up to 4 days.
